Garlic Lentils (so good)

Having recently re-discovered lentils, I thought I would share my normal evening meal now. IT is full of nutrition, and the ingredients run very cheap.
For one heaped bowl of extremely filling food use...
100 grams of dry lentils
200 grams of potato (about 1 small to medium potato)
50 grams spinach
1 clove garlic
100 grams of natural unsweetened yogurt.

Dice potatoes into 1cm cubes, and throw into a pot with lentils. Simmer until the potatoes go soft, and the lentils mush (prob about 15-20 mins). Drain water. Put everything in a bowl. Mix. Consume.

End result is a turkish-y garlic-y/yogurt-y flavor. Very smooth consistency.
You can also skip the yogurt, garlic and potato if you like. The spinach and lentils taste great by themselves, and I only add the potato for the calories.
I haven't tried it, but I speculate this may be the worlds best meal if a super hot pepper is diced and mixed into the meal.

1 squirrel (or 2 if youre extra hungry), dressed and quartered
1 can tomatoes (or your own, blanched and crushed)
Butter
Carrots
Celery
Potatoes
Salt
Pepper
Crushed Red Pepper
Any other Spices you might fancy
Flour
In large stew/sauce pot deal-y
Coat the squirrel in flour, salt and pepper
Brown the squirrel in butter
Add Vegetables and spices
Cover the stuff with water so everything is submerged but dont overfill
Bring to a boil then simmer an hour or two
Add tomatoes, simmer another hour or so
Enjoy

PIGGY'S PINEAPPLE (OR MANGO) CURRY
60 oz Pineapple (3 20 oz cans packed in Pineapple Juice)
1 stick of cinnamon
1 stalk of lemongrass (cut in approx 2" sections)
Fresh Ginger about the size of half a stick of butter
1 tsp galanga power
1 tbsp turmeric
1/2 cup of coconut oil (or a neutral tasting oil)
2 medium onions - chopped/diced (I like red onions)
2 tbsp ground cumin
1 tsp salt 2 tbsp sambal olek (chilli paste)
Ground Black Pepper (optional)
1/2 can coconut milk
Thai sweet basil (small fist full?)
STEP 1
Pot 1 - Big enough for 3 cans of pineapple
Add the fluid of the canned pineapple, stick of cinnamon, and lemongrass.
If you like chunks of ginger, add ginger here.
Bring to boil.
Reduce heat to simmer.
Simmer for 15 minutes (extracting cinnamon and lemongrass flavors)
Pot 2 - Big enough for everything (4 qts will probably work)
Medium to medium low heat. add coconut oil & onions. Make sure the oil is before you add the onions.
You are just sweating the onions until they are soft and translucent.
STEP 2
Pot 1 -
Taste the liquid.
Once you taste the cinnamon and lemongrass flavors mingling add the pineapple and turmeric.
Stir.
Raise heat to bring to boil.
Once it boils add it to Pot 2.
STEP 3
Bring to boil.
Reduce to simmer.
If you don't like chunks of ginger, add grated ginger here.
Stir in cumin and salt.
Add half of the chilli paste/sriracha.
Simmer for 15 minutes.
Taste and make adjustments. -If it feels like it just tastes like candy and needs more depth of flavor try adding a bit more cumin. Add a bit of black pepper. -Check for heat. Adjust with your chilli paste/sriracha. You want it to be a little more spicy than you plan to serve it; the coconut milk will tone down the heat a bit. -If it feels lifeless, try giving it a pinch of salt and see what that does.
Continue simmering until water reduces enough that the pineapple is no longer completely immersed in water. Turn off heat.
Stir in Coconut Milk. It is usually about 1/2 can. Start with 1/4 cup and check the consistency.
Stir in Thai Sweet Basil. (I like to do chiffonades, but mincing it works well too.
