Automated emoting is something I've seen in a few places which was really fun. It encouraged PCs to emote and was handy for the players at the same time.
With this I mean, if PCs type: *nods* the PC actually emoted in addition to the text. Same goes for *scratch(es) head*, and that sort of stuff.
Maybe it's easy to add, and something fun.

In NWN1, in order to process speech the way you describe, you have to use "listeners". Unfortunately, only creatures can be configured to listen (maybe items too? - it's a short list anyway) so while it can/would work fine in areas populated with NPCs, it can't/wouldn't work elsewhere. You may have noticed that where you played. To provide a system without such limitations would be a real PITA.
NWN2 is supplying dedicated player events (something NWN1 lacked), so in theory, a PC's OnConversation would fire whenever they spoke making the implementation of emote-processing trivial. There might be a similar workaround in NWN1 which makes it less painful to implement this, but it's too late to care at this point.
So, consider yourself better informed.
